This hard red wheat is grown in cool dry climates allowing the protein or gluten content to be high and moisture content low. We like the strong wheaty flavor for most of our bread baking. Please store in the refrigerator or freezer in an air-tight container. Your flour is ground on the day it is shipped and has no preservatives.
